Carrots are one of my favorite things to grow in the garden. Before moving to Florida I thought the weather here was too warm for them. I found the a package of rainbow colored carrots in my local garden center and decided to try anyway, since they were so beautiful an all! Well I planted them in early October and had colorful carrots by January. It was so much fun to guess the color before pulling them! My friends kids helped harvest that year and I immediately washed and sliced them all and served carrots covered in butter and maple syrup! All the kids said they were the best carrots they had ever had and I agree, they were fantastic!
We are using organic orange carrots today. The flavor of carrots really shines when you add the tablespoon of maple syrup. If you choose to omit it the consistency will still be the same and it should still be perfect for introducing your little one to this naturally sweet root.
